Salad Jars
What a great idea! I don't know who originally came up with these super salad jars but I've seen them everywhere and just had to try it. Mine stayed fresh, delicious and ready to eat for at least three days... but they don't usually last that long.
My favorite is Southwestern, of course. And since this particular combination uses heavier greens, it's great warmed up too!
- zucchini
- corn
- tomatoes
- black beans
- red onion
- red bell pepper
- quinoa
- spinach and kale
- fresh cilantro
- toasted sunflower seeds
- sprouted black lentils
The green dressing at the bottom of the jar is Avocado Ranch, based on a recipe from Rouxbe. I substituted the dill with fresh cilantro, used lime instead of lemon juice and added a dash of chili powder to give it that south-of-the-border twist.
